Toronto Bee Rescue is a family business in Mulmur, Ontario that has turned a 2 hive hobby into a more than 600 hive business.   Along with honey production, they specialize in humane removal and relocation of honeybee colonies.
Different seasons and regions will reflect the honey flavour.  Seasonal raw honey allows you to taste the influence of different flowers based on where the yards are located.

With regard to organic,  the beekeeper uses all natural treatments on the hives, however, because bees can forage yup to a 5km radius from their hives,  it makes it impossible to guarantee they only visit organic plants.

Crystallization occurs when types of sugars in honey separate from the water.  Some honey will crystallize faster than others depending on the type of sugars in it.  Crystallization is a natural process that doesn't affect the honey quality, it just changes its' texture.  Sitting the jar in warm water can help dissolve the crystals.
